Ingredients
- 500 g green beans
- 40 g walnuts chopped and toasted
- 2 tbsp lemon juice
- 1 ½ tbsp extra virgin olive oil
- 1 tbsp low GI honey
- 1 tsp fresh thyme
- sea salt and ground black pepper
Method
- Trim the tops of the beans. Steam or blanch beans for approximately 3-5 minutes or until tender. Rinse in cold water to stop the cooking process then drain thoroughly and pat dry with a clean tea towel or paper towel.
- For the dressing: add olive oil, lemon juice, honey, salt, pepper and thyme to a small bowl or jar. Mix or shake well.
- Add cooked beans to a large bowl. Drizzle over the dressing and top with chopped walnuts
